good vs. evil *mwuahahaha*

well, it's nearly as spirited as the the title suggests. we are actually in the process of working on angel and devil's food cakes. what's particularly cool about these cakes is that one cake requires all egg whites, while the other requires egg yolks. so it's all very yin yang, if you ask me.

we are currently also taking health and sanitation lecture seminars for our test (tomorrow!! eek!) so class time has been shared with a different goal. i'm looking forward to just working on cake, as opposed to talking about all the nasties that could make their way into your food. yes, of course it's relevant and important. but i just want to have fun! :o) can you blame me? between the amazing course load, the talented, passionate Chef-Instructors, and the opportunities that await...it's impossible to want to do anything but cake!

however, i just wanted to show you my angel and devil's food cakes!

we carved our angel food cakes into 6" square layers and will be filling them with a strawberry butter cream.

and icing them in buttercream in a basket weave pattern.

but we haven't really started that yet. that's for next class! there will be plenty of photos to follow!

so think of this as a cake-teaser!
